Healthy Monkey Bread

22 Oct

Today is a Professsional Activity Day for the teachers in our area which, for us, means no school. Kidlet and I always treat P.A. days like special occasions and this one’s been no different. This morning we decided to forgo our usual breakfast for making a pan of this: monkey bread. Yum. Healthier than the original recipes, it’s still a treat and should definitely be reserved for special occasions.

Makes 4-6 servings

16 oz. wholewheat pizza dough
3 Tbsp sucanat or organic sugar
1 Tbsp cinnamon
1/4 c. unsweetened applesauce
1/4 c. vegan margarine, coconut oil or organic butter, melted
1/4 c. real maple syrup

Preheat oven to 350 F.

Remove dough from bag (if using store bought) and set on floured board to rest for roughly 20 mins.

Spray a 8-9 inch cake pan with cooking spray or oil.

Combine cinnamon and sucanat or sugar in a small bowl.

Break off 1 inch chunks and roll into balls.  Roll each ball in the cinnamon mixture and place in the bottom of the cake pan. Continue until you’ve used all the dough and the pan is full. Save any remaining Sucanat/cinnamon mixture for use on toast.

In a second bowl, mix together applesauce, melted margarine and maple syrup.  Pour the syrup mixture over the balls of dough, distributing evenly.

Bake for 25 minutes.  Allow to cool for a few minutes before turning pan over onto a large plate.

Pull off pieces with your fingers and enjoy!

We LOVE this recipe. So quick and easy to make, and the entire pan-full disappears in less than 24 hours.
